With diet and/or medication, kidney values certainly can reduce. You've mentioned kidney disease, but methimazole is for thyroid function, if she has both, treating thyroid normally makes kidney function worse, as the increased blood flow with thyroid disease helps kidney function

Not sure they'd be ready for full reign of the house, when I get up on a weekend to feed them and go back to bed, they fly back in their room, so not sure I'd want that for them 24/7. I also haven't often gone out to find cats, most find me but that will be different now I'm no longer volunteering.

I'd try feeding them further apart, not all cats like eating so close to another - I have a mother and daughter who won't eat next to each other, they eat a few feet apart from each other.

We had a fosterer with mobility issues who used a chair to do the litter trays, although she did have help with putting the used litter in the outside bin. I wouldn't recommend a kitten or probably a young cat, mainly for similar reasons to Susan, kittens are enough of a trip hazard for agile people...
