Unusual new behaviour

We went away for a few days in August and Dad was looking after Ruby for us. True to form she sulked and did too poo’s indoors which was naughty but not unexpected. I found when we got back that she’d also dug holes in the lawn (quite substantially sized ones) and been poo’ing into them. I took the pop out and sprayed the holes with all sorts to distract her from the area and covered the holes but she dug new ones. I’ve put her litter tray in the utility room, sometimes she uses it and sometimes she walks past it to go outside and has today dug a new hole 🤦🏼‍♀️

She has a huge dug over area at the back of the garden that her and next doors cat have poop’ed in for years so I’m struggling to know why this behaviour has occurred...... any ideas?
