Digestion Question

Hi, we've been having some issues with my cat's digestion. Without going into the whole backstory, he was put on Royal Canid Gastrointestinal wet food.
Since being on it he's had terrible diarrhoea. I also find if I give him only boiled chicken it also causes diarrhoea. Does anyone know why both the Gastrointestinal food and plain chicken would cause this, but nothing else?
Does he need more fibre? is he digesting the food too quickly? any reason you can think of?
